CINNAMON RAISIN BREAD LOAF

Ingredients:

•One and a half cups water plus water to soak raisins
•2 tablespoons of butter softened or alternatively two tablespoons of either vegetable or coconut oil
•4 cups bread flour
•Quarter cup of sugar and one teaspoon of sugar for soaking the raisins
•One and a half teaspoons of salt
•2 level teaspoons of ground cinnamon
•10 grams of instant yeast
•One cup of raisins

Directions:

Firstly, place the raisins into a bowl cover with hot water and sprinkle over a teaspoon of sugar. Let the raisins soften for at least half an hour to 45 minutes until they have started to swell up with the liquid.

Strain of the excess liquid from the raisins keeping it to one side to add to the water.

Carefully, measure out all ingredients.

If you are using a bread maker use the following set of instructions:

Place all the ingredients except for the raisins into a pre-greased bread machine pan, in the order recommended by the manufacturer(usually the wet ingredients first, followed by the dry ingredients and then the yeast).

Add the raisins at the raisin/nut cycle; or 5 to 10 minutes before the last kneading cycle ends.

Select either the Sweet or Basic/White cycle on your bread machine and choose either the medium or light crust colour.

Once baked, remove the baked bread from the pan and cool on a wire rack.

Optionally you can also use your dough cycle setting and bake the bread in a loaf pan.

First grease a loaf pan with cooking spray and flour.

Alternatively, place the mixed dough from the dough cycle into a bread pan; not forgetting to remove the blade that sometimes come out with the dough.

Spray a sheet of plastic wrap with cooking spray and lightly cover the dough in the pan (with the cooking spray side down).

Let the dough rise again for 1 hour.

Bake in a preheated oven at 180 degrees Celsius for 30 to 35 minutes.

Once baked, remove the baked bread from the pan and cool on a wire rack.

Directions for hand kneading the dough or using a stand mixer:

Place all the ingredients, except for the raisins, into a large mixing bowl or the stand mixers bowl. Starting with your wet ingredients first.

If you are using a stand mixer make sure you choose the correct accessory for kneading dough.

If you are kneading by hand, start mixing slowly until the dough forms a soft paste and then add in the raisins.

If you’re using a stand mixer, start on the lowest setting, let the ingredients mix until it starts forming a soft paste like dough; and then add the raisins.

Once your is ready and has formed a nice firm ball, follow the same instructions as above.

Spray a sheet of plastic wrap with cooking spray and lightly cover the dough in the pan (with the cooking spray side down).

Let the dough rise again for 1 hour.

Bake in a preheated oven at 180 degrees Celsius for 30 to 35 minutes.

Once baked, remove the baked bread from the pan and cool on a wire rack.
